Instructions

1. Prep the broccoli – If you prefer softer broccoli, blanch the florets in boiling water for 1 minute, then immediately transfer to ice water to keep them crisp. Otherwise, use raw for extra crunch.

2. Prepare the veggies – Thinly slice the bell peppers, onion, and cabbage. Julienne the carrot.

3. Mix the salad base – In a large bowl, combine broccoli, bell peppers, onion, carrot, and cabbage.

4. Whisk the dressing – In a small bowl, whisk olive oil, vinegar (or lemon juice), mustard, honey/maple syrup, garlic, salt, and pepper until smooth.
Toss & serve – Pour the dressing over the salad, toss well, and sprinkle sunflower seeds on top. Serve immediately or chill for 15 minutes before serving for deeper flavor.
