Instructions

Step 1: Prepare the Chhole 1. Heat oil in a pan. Add bay leaf, black cardamom, cloves, and cumin seeds. Sauté until fragrant. 2. Add onions and sauté until golden brown. 3. Stir in ginger-garlic paste and green chilies. Cook for 1–2 minutes. 4. Add tomato puree and cook until oil separates. 5. Add turmeric, coriander powder, cumin powder, chili powder, and salt. Cook well. 6. Add boiled chickpeas with 2 cups of water (use chickpea stock if available). 7. Simmer for 20 minutes until thick and flavorful. 8. Stir in garam masala, amchur, and black salt. Garnish with coriander leaves. Step 2: Prepare the Bhature 1. In a mixing bowl, combine flour, semolina, baking powder, baking soda, sugar, and salt. 2. Add yogurt and oil. Mix well. 3. Gradually add water to knead into a soft, smooth dough. 4. Cover and rest the dough for at least 2 hours. 5. Divide into equal portions and roll into medium-sized discs. 6. Heat oil in a deep pan. Fry each bhatura until puffed and golden. Step 3: Serve 1. Serve hot chhole with fluffy bhature, onion rings, green chutney, and a wedge of lemon.
