Instructions
1. Blanch the spinach leaves in boiling water for 2–3 minutes, then immediately transfer to cold water. Blend into a smooth puree.
2. Heat oil or ghee in a pan. Add cumin seeds and let them splutter.
3. Add chopped onions and sauté until golden brown. Add ginger-garlic paste and sauté for another minute.
4. Add turmeric, coriander powder, and tomato puree. Cook until the oil separates from the masala.
Add spinach puree, salt, and 1/4 cup water. Mix well and cook for 5 minutes.
Add paneer cubes and simmer for 5–7 minutes on low heat.
Stir in cream if using, and sprinkle garam masala. Cook for another 2 minutes.
Garnish with chopped cilantro and a drizzle of cream. Serve hot with roti, naan, or rice.
