Instructions

1. Rinse and cook quinoa until light and fluffy.

2. Chop bell peppers, zucchini, and carrots; drizzle with olive oil, salt, and pepper. Roast at 200°C (400°F) for 20 minutes.

3. Toss cooked quinoa with roasted veggies in a bowl.

4. Whisk lemon juice, olive oil, and herbs for the dressing.
