Instructions

1. Make soft chenna/paneer by curdling milk and draining it well. Knead the paneer until smooth and divide into small balls. Flatten slightly to form discs.
2. Boil 4 cups of water with 1/4 cup sugar. Gently add the paneer balls and cook on medium heat for 10–12 minutes. Remove and let cool.
3. In a separate pan, boil 4 cups milk with 1/2 cup sugar, saffron strands, and cardamom powder. Reduce milk slightly until it becomes creamy (approx. 10–12 minutes).
4. Add rose water if using. Gently place cooked paneer balls into the milk. Simmer for 5 minutes to let them absorb the flavors.
5. Cool to room temperature, then refrigerate for at least 1 hour before serving.
6. Garnish with chopped pistachios or almonds and a few saffron strands. Serve chilled.
